Dairy Free Pimento Cheese

Used to be you had to be from the southern U.S. to know about pimento cheese but it has spread like wildfire recently. It's a crowd pleasing party dip, potluck dish and picnic snack and now you can make it dairy free, Vegan and Paleo. Don't tell your dairy-loving friends and notice how no one will miss the dairy!

Urban Cheesecraft dairy free pimento cheese recipe vegan paleo 


  • 1.5 cups leftover cheese- mozzarella and smoky cheddar from Urban Cheesecraft kits or store bought approximations
  • 1/4 cup diced pimentos (cute mini jar) or roasted red bell pepper
  • 1 teaspoon mustard of your choice, to taste
  • 1/4 teaspoon onion powder, to taste 
  • 1/4 teaspoon garlic powder, to taste
  • 1/2 teaspoon sea salt, to taste
  • 2 teaspoons or to taste of a mayo that you can eat, optional but helps with texture if you purchase dry cheese- our kit cheeses do not need this addition


  • Cheese grater
  • Potato masher
  • Serving bowl


  • 1.5 cups 


STEP 1. 
Select your cheeses- look for soft textures that can become spreadable if mashed or grated. This recipe was born out of test kitchen leftovers here at UCC headquarters! It's very flexible and forgiving but texture is important. Our kits use agar to solidify these cheeses and that gives us the perfect texture after a couple of days.

Mash the mozzarella, shred the smoky cheddar and pile on all other ingredients. Stir thoroughly. If you can't find pimentos (tiny jars, really inexpensive), you can chop up roasted and peeled red bell peppers (homemade or purchased jar).

If you can't find a smoked cheddar and you haven't made the insanely easy and delicious version in our kits yet, add 1/2 teaspoon smoked paprika.

It should look invitingly chunky but spreadable. Pile it in a nice serving dish and grab some crackers, bread or raw veggie sticks. It makes an addictive dip and sandwich spread. You won't know how you lived without pimento cheese before. Now it's dairy free. Move over hummus!

Customize it - Want it spicy? Add a pinch of cayenne pepper or diced pickled peppers. Want it probiotic? Add chopped kimchi. Make it yours and let the requests begin!
